Dialysis is not usually an analytical technique. The broad pore sizes do not lend themselves to quantitative determination of molecular weight.

Dialysis is usually used as a general purification step, either in a preparative procedure or as a clean-up step for another analytical procedure.

It's most commonly done by putting your sample inside a bag of dialysis membrane and then putting the dialysis bag in a large container of buffer. The concentration of small molecules inside the dialysis bag is reduced (they can diffuse into the large buffer container) while the concentration of large molecules, like proteins, is not reduced.
